Fresh Strawberry Lemonade Recipe

A refreshing summer drink bursting with sweet strawberries and freshly squeezed lemon.

Light, fruity and wonderfully refreshing, this homemade strawberry lemonade is the perfect drink for warm summer days. Combining ripe strawberries with zesty lemon and plenty of ice, it’s a simple seasonal recipe that feels both vibrant and indulgent.

Inspired by relaxed summer afternoons at Barnsdale Gardens, this refreshing drink brings a taste of the Helenium Tea Room to your table.

Ingredients

  • 175g sugar.
  • 400g strawberries, hulled and quartered.
  • 6 whole strawberries, for garnish.
  • 200ml freshly squeezed lemon juice (approximately 4–5 lemons).
  • Ice

Method

  1. Place the sugar and 1 litre of water into a saucepan over medium heat, stirring gently until the sugar has fully dissolved. Remove from the heat and leave to cool completely.
  2. Add the strawberries to a blender and blitz until smooth. For a smoother finish, strain the purée through a fine mesh sieve to remove the seeds if desired.
  3. Pour the strawberry purée into a large jug along with the cooled sugar syrup and freshly squeezed lemon juice. Stir well to combine.
  4. Fill glasses with ice, pour over the strawberry lemonade and garnish with whole strawberries before serving.

A Tip from the Tea Room

  • Add fresh mint leaves for an extra refreshing summer flavour.
  • Top with sparkling water for a lighter, fizzy version.
  • Freeze sliced strawberries to use instead of ice cubes.
