When tomatoes are at their sweetest, there's no better way to enjoy them than in this quick and colourful recipe. Combining a classic bruschetta topping with crisp flatbreads and melted mozzarella, it's perfect for a light lunch, alfresco dining or sharing with family and friends.

Inspired by the fresh, seasonal dishes served at Helenium Tea Room, this recipe brings a taste of the tearoom to your table.

Ingredients

  • 300g cherry tomatoes, halved.
  • 1 garlic clove, minced or finely chopped.
  • 1½ tbsp extra virgin olive oil, plus a little extra for brushing.
  • 1 tsp balsamic vinegar.
  • 3 tbsp fresh basil leaves, chopped.
  • Salt and freshly ground black pepper.
  • 2 bruschetta flatbreads.
  • 200g fresh mozzarella, torn.

Method

  1. Preheat the oven to 220°C / Gas Mark 7.
  2. In a mixing bowl, combine the cherry tomatoes, garlic, extra virgin olive oil and balsamic vinegar. Season with salt and freshly ground black pepper, then stir through the chopped basil. Leave the mixture to stand at room temperature while you prepare the flatbreads. This allows the flavours to develop.
  3. Place the flatbreads on a baking tray and lightly brush with a little olive oil or melted butter. Bake for 6–7 minutes, or until lightly golden and crisp around the edges.
  4. Remove the flatbreads from the oven and spoon the tomato bruschetta mixture evenly over each one.
  5. Scatter the torn fresh mozzarella over the tomato mixture and serve immediately, garnished with a few extra basil leaves if desired.

  • Finish with a drizzle of balsamic glaze for extra richness.
  • Add a handful of rocket leaves just before serving for a peppery freshness.
